Sunday night, I grilled several chicken breasts. They were delicious. But I had a hankering for pizza. I’m trying to find a recipe for whole-wheat pizza crust. (I’m probably going to find a recipe on the Weight Watchers website.) I seasoned the chicken with a spice rub from Penzeys “Arizona Dreaming.” It is an amazing spice blend with a smokey flavor and a hint of spice. I’m already planning to make a couple of salads with the chicken, but I can only eat so much rabbit food.
So, I decided that I would take advantage of the warm weather and keep using the grill this week. I’m really excited about the prospect of making the pizza on the grill. I love the smokiness that will be infused into the crust. And then the different texture that come from a grilled pizza. Also, it will keep my house from over-heating.
